Post-Natal Diet : Some Chicken Recipes

    "MA-YAO KAI" (SESAME SEED OIL CHICKEN)

    (This dish is said to promote blood circulation, provide nourishment & stimulate energy)

    150g Chicken Fillet
    4 slices Old Ginger
    3 Tbsp Sesame Seed Oil 
    (If you find this too heaty, you can use less sesame seed oil & substitute the remaining portion with normal oil)

    1 tsp light soya sauce
    1 tsp sugar
    1 TBsp Chinese Rice Wine
     

  • Wash Chicken & cut into serving pieces.
  • Heat Oil. Fry ginger slices until fragrant.
  • Put in Chicken pieces & stir-fry for approx 5mins.
  • Add soy sauce & sugar. Cover wok & cook for 5mins approx.
  • Add Chinese Wine & stir-fry for another 1 min. Then serve.

    STEWED CHICKEN WITH WOOD FUNGUS

    (For cleansing arteries & getting rid of stale blood)

    150g Chicken Wing Sticks (otherwise known as "drumettes")
    10g Chinese Mushrooms, soaked
    20g Dried Lily Buds ("Kum Chum"), soaked
    10g Wood Fungus ("Mok Yee", soaked
    8 to 10 pieces Red Dates, stoned
    4 slices old ginger
    1 Tbsp Oil

    Marinade:
    1 tsp light soy, 1 tsp dark soy, 1 tsp sugar, 1 tsp ginger juice, 1 TBsp Cornflour, 1 TBsp sesame seed oil, 1 Tbsp Chinese Rice Wine.
     

  • Soak lily buds, mushrooms, & wood fungus for 1/2 hour. Cut wood fungus into small pieces.
  • Marinate Chicken Pieces for at least 10mins.
  • Heat 1 Tbsp Oil in a Claypot. Fry ginger until fragrant.
  • Fry Wood Fungus for 2mins. 
  • Add red dates, mushrooms, & marinated chicken and fry for 5mins.
  • Pour in 2 cups of the mushroom soaking water. Add the LilyBuds. 
  • Cover claypot, bring to boil.Then lower flame & simmer for 15mins.
  • Serve.

    CHICKEN FILLET STIR-FRIED WITH WOOD FUNGUS

    (Wood Fungus is rich in iron & functions to drive away stale blood "lochia")

    150g Chicken Fillet, washed & cut into thin strips
    1/2 carrot, cut into thin strips
    10g "Mok Yee" / Wood Fungus, soaked & cut into thin strips 
    2 slices Old Ginger
    1 Tbsp Oil

    Marinate
    1/2 tsp light soy, 1/2 tsp sugar, 2 tsp ginger juice, 2 tsp Chinese Wine.

    Seasoning:
    1 tsp light soy, 1/2 tsp sugar, 1 tsp sesame oil, 1 tsp Chinese Wine.
     

  • Marinate the Chicken Fillet strips for 5mins.
  • Heat 1 Tbsp Oil. Fry ginger slices until fragrant.
  • Put in Carrot strips, and fry for 2mins. Add wood fungus strips, and 1/4 cup water. Cover wok and allow mixture to cook for 5mins.
    Add the seasoning mixture. Stir-fry briskly for another minute, then serve.
