If you are only using them to transport your expressed milk back from your office refridgerator, then 1 icebrick should suffice.  If you are using the cooler bag as a refridgerator substitute, then it would be better for you to have at least 2 icebricks.  This way, if you are a working mom on-the-go,  you can keep your expressed milk fresh even if you don't have a fridge available for your use.

(Do be reminded that as cold air travels downwards, do not store your milk with the frozen icebrick at the bottom of the cooler.  You should either place it at the side of your milk bottles, or right on top of the bottles.)
