TRADITIONAL CHINESE CONFINEMENT DIET

    1st Foods After Delivery & Some Egg Recipes


    FRIED RICE
    (Traditionally, the 1st solid food offered to a New Mother. Helps to alleviate "wind" after delivery. New Mother is to eat this and drink Red Dates Tea).

    Old ginger, shredded
    1 egg, beaten
    1 rice bowl cooked rice
    1 Tbsp sesame oil
     

  • Heat the wok (with a little bit of oil if your wok is not "non-stick"). Then put in the beaten egg. Spread the egg mixture thinly to get a nice thin "omelette". When cooked on both sides. Let it cool then cut into thin strips. 
  • Heat the sesame seed oil until hot & smoky, then fry the ginger until fragrant.
  • Add cooked rice and fry well for 3 mins. Mix in the egg omelette strips & serve.

    RED DATES TEA
    (Helps revitalise general health. Drink as often as you like - It's Tasty!)

    8 red dates
    50g black beans, pan-fried without oil
    20g Dong Sum / "dangshen" (codonopsis pilosula)
    4 slices old ginger

    Rinse all the herbs. Put them in a crockpot and fill it ¾ full with HOT water. Boil for 2 hours.

    For me, I usually just put all the ingredients in the crockpot the night before, filling it with normal tap water. By morning, there will already be a nice big pot of fragrant Red Dates Tea to drink for the whole day.
     


    FRIED EGGS WITH GINGER
    (Eggs are a Complete protein food, which is good for nutrition especially if you don’t like eating meat dishes excessively. This dish invigorates the blood & improve complexion. Smells great too!)

    2 eggs, beaten
    Old ginger shredded (2 or 3 slices, I guess - estimate!)
    3 Tablespoons sesame seed oil

    Heat oil in wok until hot, then fry the shredded ginger till golden brown. Pour the beaten egg over the ginger strips and fry it until done.
     


    WHITEBAIT OMELETTE
    (Fish & Eggs are high protein foods. Whitebait is a good source of calcium)

    100g cooked whitebait
    3 eggs, beaten
    2 slices old ginger, shredded
    1 stalk spring onions, cleaned & chopped
    1 stalk coriander, cleaned & chopped
    1 Tbs Sesame Seed Oil
     

  • Rinse & Drain Whitebait. Season with ½ tsp light soya sauce.
  • Heat the Oil in wok, then add shredded ginger & fry til fragrant. 
  • Lower heat, add whitebait & fry fish until light golden brown.
  • Pour the beaten egg over fish and cook until eggs settle into an omelette.
  • Sprinkle the Spring Onions & Coriander over omelette before serving.
